Preheat the oven to 5000f.
Chantilly cream cake. Dip chicken into egg then into the breadcrumbs. Place chicken over sauce and cover with remaining sauce. Pour 12 of the pasta sauce into a 20x20cm baking dish. Stir the oil and herbs in a small bowl to blend.
Pour sauce into a 9 x 13 baking dish and place chicken in. Remove from heat and stir in parsley. Pierce the chicken all over with a sharp knife. Place coated chicken on the prepared baking tray and bake in the preheated oven for 40 minutes or until no longer pink and juices run clear.
Heat grill to high and cook the chicken for 5 mins each side then remove. Pour pasta sauce into a lightly greased 23x33cm or similar sized baking dish. Once sizzling add the crumbed. Dip the flattened chicken breasts escalopes in the beaten egg followed by the parmesan breadcrumbs.
Put in a shallow dish and rub with the olive oil and garlic. 3 large eggs beaten. Add the cutlets and cook just until brown about 2 minutes per side. Dip chicken in egg.
Brush both sides of the cutlets with the herb oil. Season and simmer for 5 10 mins. In a large frying pan heat oil over medium high heat. Salt and pepper to taste.
To skillet add spaghetti sauce. Add pepper and cover with clingfilm. Add in tomatoes and water season with salt pepper and chilli flakes and let simmer 10 minutes. Dip chicken breasts into beaten egg then into breadcrumb mixture to coat.
Season the chicken with salt and pepper. Place slices of mozzarella on top of chicken. Truly a great recipe. Then in bread crumbs.
